How do I change the hostname on Ubuntu 20.04 LTS Linux system permanently?
Just curious, how is it different from previous way? Has 20.4 added / modified hostname management in any manner? Thanks.

Not much changed. However, due to systemd based distro it is recommend not to use the hostname command and just stick with the hostnamectl.
hostnamectl set-hostname _user_host
